Gluten-Free Breaded Jackfruit Nuggets

The last post in this jackfruit series is what I like to call jackfruit nuggets, they remind me of a breaded chicken nugget! It’s chewy and meaty on the inside with a nice crispy breading on the outside. Then dip it in your favorite sauce and it’s a perfect vegan meat substitute!

In this recipe I used the abundance of fruit pods I had leftover from the first two jackfruit recipes.

This is a really simple recipe, we are basically just breading the jackfruit’s fruit pods, baking them for 30-40 minutes and smothering and/or dipping into our favorite sauce. I will give you a great basic gluten free breading and a vegan binding solution.

Breaded Jackfruit Nuggets
Serves 3
Delicious jackfruit breaded in a gluten free and vegan breading and baked until crispy on the outside and chewy in he middle.

Vegan Egg-less Binder
  1. 1/4 cup flax seed
  2. 1/8 cup water
  3. -Let this mixture sit for about 3 minutes or until it resembles egg white's consistency.
Gluten-Free Breading
  1. 1 cup oat flour; oats processed in food processor
  2. 1/2 cup sunflower seeds; ground in spice grinder
  3. 1/4 cup almond flour; or millet flour
  4. a pinch of sea salt and pepper
Instructions
  1. Pre-heat the oven to 350 degrees F
  2. After you are done grinding the sunflower seeds into a flour and processing the oats into flour, combine all the ingredients for the breading in a bowl and mix well.
  3. Dunk the jackfruit into the flax seed binder then into the breading mixture and place them on a baking pan.
  4. Bake them for about 35 minutes or until the breading is crispy.
  5. Dunk them in your favorite sauce or in the sauces we made in the previous jackfruit recipes.
Notes
  1. Throughout this whole series I was working with a 1/4 of a jackfruit weighing about 7 lbs

Raw Vegan Avocado Buffalo Sauce

The BBQ is made with a base of tomatoes, dates and spices; it is also blended all together, and super simple to make.

A simple bbq sauce made from whole ingredients.

Ingredients
  1. 1/2 cup water
  2. 1/4 cup sun-dried tomatoes; soaked
  3. 1/4 cup dates; soaked
  4. 1/2 tbsp onion; fresh
  5. 1/2 garlic clove
  6. 1 tsp apple cider vinegar
  7. 1 tsp chili powder
  8. 1/2 tsp mustard seed
  9. 1/2 tsp cayenne pepper
  10. 1/4 tsp celery seed
  11. pinch of salt and pepper
Instructions
  1. Soak the sun-dried tomatoes until soft. You can use the soak water as the water called for in the recipe.
  2. Soak the dates if they are not soft already.
  3. Add all they ingredients to a blender and blend until smooth.
Notes
  1. I recommend a small blender for such a small portion, if you have one.

Raw Vegan Avocado Buffalo Sauce

raw vegan avocado buffalo sauce perfect where buffalo wing sauce is needed.

Ingredients
  1. 1/2 cup water
  2. 1/2 avocado; ripened
  3. 1/2 garlic clove
  4. 1/8 cup fermented cayenne sauce; hot sauce
  5. 1 tsp apple cider vinegar
  6. 1/4 tsp celery seed
  7. salt and pepper to taste
Instructions
  1. Blend everything together in a blender.
Notes
  1. Stores up to 4 days in an airtight container.
