To all the cookie monsters out there, this one’s for you! All you need is 3 ingredients and 5 minutes for the thickest, densest, most peanut buttery, cookie in the galaxy.  You’ll also need a food processor and electricity. 😉 The best part about this cookie recipe is you can eat all the cookie dough you want! These cookies are done right away, minus the refrigeration stage which they might not even make it to.

As a self proclaimed cookie monster, I found myself at the local market buying their vegan chocolate chip cookies a little bit more often than I would have liked. I just simply didn’t have the time to make anything but I knew I just needed to make the time! So one day I just threw together a trail mix of cashews, peanuts, goji berries, and dates in a mason jar, shook it up and took it to work. My favorite was adding the peanuts to the dates. The combo was so good I found myself excluding everything else and going straight for the peanuts and dates. The next day before work I was making my lunch and thought I’m just going to try making this into a cookie real quick to see if I can curb my cookie craving at lunch. To my surprise it took me 5 minutes to throw together I then quickly formed a few cookie balls, threw it in a bag on an ice pack and out the door I went. I didn’t bother to clean the food processor because chances were I’d be making more peanut butter cookies later that night!

5 minute peanut butter cookiesThese peanut butter cookies were not only super easy to make, they helped me replace my gluten filled cookie with something just as satisfying. Every time I ate the vegan chocolate chip cookie, I would get the inevitable mucus and I would always want another. Sometimes I would buy 2, and these were big cookies at a $1.20 a piece, but I ate every last bite; being the cookie monster that I am. The peanut butter cookies are so rich and dense that you’ll barely be able to eat more than 2 at a time. I do have to warn you, although these may be better for you than regular cookies that doesn’t mean you should go overboard. Peanuts are highly acidic when roasted and un-sprouted, they can give you heart burn if you eat too many but the same goes for baked cookies just with raw cookies you don’t get the mucus. Sorry to be so gross, but it’s a real problem for cookie monsters!

How to make ra vegan peanut butter cookies

I have tried this recipe with what claims to be raw peanuts from the super market but they must be pasteurized, and they certainly won’t sprout. Those raw peanuts have almost an astringent taste in the cookie. By all means you can try using them but I have found the organic roasted peanuts from a grocery store are the best. However if you are a big raw foodie then I totally suggest trying this recipe with jungle peanuts! They won’t taste like roasted peanuts but they will be super healthy. For all my hardcore raw foodists, I would go above and beyond and sprout your peanuts! This recipe however is the simplest peanut butter cookie you can make!

Raw Vegan Peanut Butter Cookies

The easiest peanut butter cookie to make. Rich and dense with only 3 ingredients and 5 minutes to make.
Prep Time5 minutes

INGREDIENTS

  • 1 cup roasted peanuts ;or jungle peanuts
  • 1 cup dates
  • pinch of sea salt

INSTRUCTIONS

  • Process peanuts in food processor until it almost forms peanut butter and it starts sticking to the food processor walls.
  • De-pit the dates.
  • Toss in the dates and a pinch of sea salt.
  • Process again until the dates are processed well.
  • Take a little handful of dough and form dough balls.
  • Press the cookies down with a fork.
  • Refrigerate or eat as-is.

NOTES

You can freeze these cookies.
The refrigerator makes the dough a little bit harder.
You can also dehydrate these cookies to warm them and make them softer.
These cookies last about 2 weeks but I'm sure they'll be long gone by then.

  1. Wow! These are so good I didn’t even have a chance to get them rolled up before my picky kid was taking spoonfuls of the dough right out of the bowl!
