Chocolate Peanut Butter Banana Pudding

Decadent, rich, smooth, creamy; all words that come to mind when describing this vegan pudding made with a base of avocado and frozen bananas.

I have been on a pudding kick lately, alternating with this recipe and this berry banana pudding. Mainly because it’s quick and easy to make and clean up, it’s filling, satisfying, and my 1 year old loves it.

We have included this pudding in our morning routine. After we eat our fruit, we play, read stories, do chores and then we eat pudding and baby girl takes a nap. I make this right before nap time because the avocado is a great healthy fat to keep her tummy full until lunch time.

Tips

Adding toppings is always fun, in this picture I added a few walnuts and chia seeds on top. I also like taking out some pudding for baby girl and then adding a teaspoon of maca powder for myself. Maca powder boosts energy and has a bunch of nutrients. I definitely enjoy the extra energy!

If you find that your pudding just isn’t getting smooth, it may be that your blender is under-powered or your blades are dull. I used a vitamix to achieve such smoothness.

INGREDIENTS

  • 1 avocado
  • 3 frozen bananas
  • 1/8 cup cacao powder
  • 3 dried prunes
  • 3 deglet dates
  • 1 tbsp peanut butter
  • 1.5 cups non-dairy milk

INSTRUCTIONS

  • Add all ingredients to blender and blend until smooth.
