Introduction

As a true and proud cookie monster, I devoted my summer to recreating America’s favorite cookies with simple whole ingredients and simple techniques. My goal was to make a versatile cookie batter that could be used in a variety of different cookies. I wanted a raw vegan cookie with crispy outsides and soft insides. Many cookies later, I came up with 3 base recipes that can be used interchangeably in almost every cookie.

Besides wanting a great texture and flavor, I wanted options for people who are and aren’t gluten-free. We all know wheat makes cookies taste like cookies. So if you are a raw vegan but can still tolerate small amounts of gluten, sprouted wheat berry cookies may be just what you’re looking for. Alternatively if you are gluten sensitive but you still want a cookie that is crispy on the outside and soft on the inside, buckwheat may be the best option for you.

Rest assured I had a few serious cookie monsters test my recipes to make sure they were up to standard.

Getting to know the base ingredients is the most important step; we’re replacing flour, sugar, butter and eggs with ingredients such as almond flour, buckwheat groats, dates, and flax seed. After you have the base dough down pat with a great texture, you basically use the same measurements of flavoring as standard cookies. 

Almost every cookie has three different batter options, I have included every recipe combination at the back of the book. I chose my favorite versions to be displayed first.

The opportunities are limitless with the cookie batter options I’m about to show you. Without further ado, let’s make the most realistic raw vegan cookies, so you can replace your flour, sugar, butter and eggs with healthier alternatives.
