A basic raw vegan stir fry made in 5 minutes with whole ingredients like kelp noodles and shredded veggies.
This is probably one of the healthiest, quickest, most flavorful meals ever; just mix kelp noodles right out the fridge with shredded vegetables, spices, herbs, tamari/soy sauce, and an acid. The flavor possibilities are endless, I always encourage you to try your favorite veggies and flavors.
Five minutes is all you need.
The first thing I do is pour tamari (gluten-free soy sauce), and either apple cider vinegar, lemon or both over the kelp noodles and stir. You could also use an oil such as sesame oil, this time I used an avocado instead of an oil.
If you want even more flavor you can add in chili powder, mustard seed, paprika, turmeric, and/or black pepper to your taste. I would start with 1/4 tsp each and work your way up until it tastes as you desire.
You could also add your favorite herbs, for this recipe I would use cilantro, chives, or lemon grass.
Then I shred my vegetables; in this case carrots, daikon radish, cabbage, ginger, onion and celeriac aka celery root.
There are many different vegetables that would work well in this dish, in the summer I would use vegetables such as snap peas, bell pepper, tomatoes, and maybe some arugula. 🙂
Lastly I mix in my flavors; onion, ginger, red pepper flakes, and black pepper.
I always use fresh over dried whenever possible, this time I diced fresh onion, and shredded fresh ginger. If it were summer I would be using fresh jalapeño peppers.
When I come home late from teaching pole and flexibility classes, the last thing I want to do is stuff myself right before I pass out, so this stir fry was made on a whim after a long day’s work. Now anytime I need a super quick meal, I’ll make this recipe, no thinking necessary. 😉

Raw Vegan Stir Fry
INGREDIENTS
- 1 cup kelp noodles
- 1/8 cup carrot; shredded
- 1/8 cup celeriac; shredded
- 1/8 cup broccoli
- 1/8 cup cabbage
- 1 tbsp onion; diced
- 1 tbsp tamari; or soy sauce
- 1 tsp apple cider vinegar; and/or lemon
- 1/2 tsp ginger
- 1/4 tsp red pepper flakes
INSTRUCTIONS
- Stir the tamari and apple cider vinegar and/or lemon with the kelp noodles.
- Shred and cut all the veggies to desired size, and mix everything together.
