Raw Vegan Taco Meat
A simple mock meat made from seeds, veggies and spices.

Ingredients

cups
carrots
1/2
cup
pumpkin seeds
1/2
cup
sunflower seeds
1/4
cup
onion
1
garlic clove
1
tbsp
lemon juice; or apple cider vinegar
1
tbsp
chili powder
1
tsp
paprika; or smoked paprika
1/2
tsp
cumin seed
sea salt & pepper to taste
Optional
1/4
cup
sun dried tomatoes; soaked
1
tbsp
mushroom powder
1
tsp
cayenne pepper or red pepper flakes
Instructions
Roughly chop the carrots.
Process all of the ingredients together in a food processor until desired texture.
Notes
Store in an airtight container in the fridge, up to 1 week.
Taco meat gets better the next day when all the flavors meld together.
