Raw Vegan Taco Meat

A simple mock meat made from seeds, veggies and spices.

Ingredients

  • 2 cups carrots
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup onion
  • 1 garlic clove
  • 1 tbsp lemon juice; or apple cider vinegar
  • 1 tbsp chili powder
  • 1 tsp paprika; or smoked paprika
  • 1/2 tsp cumin seed
  • sea salt & pepper to taste

Optional

  • 1/4 cup sun dried tomatoes; soaked
  • 1 tbsp mushroom powder
  • 1 tsp cayenne pepper or red pepper flakes

Instructions

  • Roughly chop the carrots.
  • Process all of the ingredients together in a food processor until desired texture.

Notes

Store in an airtight container in the fridge, up to 1 week.
Taco meat gets better the next day when all the flavors meld together.
