Curry Coleslaw

A twist on a classic, vegan coleslaw with new flavors.

Ingredients

  • 3 cups cabbage; shredded
  • 1 cup carrots; shredded
  • 1/4 cup vegan mayo
  • 1/4 cup scallions and spring green garlic
  • 2 tbsp basil
  • 1 tbsp apple cider vinegar
  • 1 tbsp coconut sugar
  • 1 tsp curry
  • 1/2 tsp celery seed
  • 1/2 tsp mustard powder
  • 1/2 tsp turmeric
  • 1/4 tsp peppercorn
  • pinch of salt

Instructions

  • Shred the cabbage and carrots,
  • Mince the scallions, spring green garlic, and basil.
  • Add in the rest of the ingredients and stir well.

Notes

Store in an airtight container, in the fridge, for up to 5 days.
