Chewy Berry Nut & Seed Bars

Energy packed superfood energy bars.

Ingredients

  • 1 cup cashews
  • 1/2 cup pumpkin seeds
  • 1/2 cup almonds
  • 1/2 cup chia seeds
  • 1 cup superfood berry mix*
  • 4 juicy dates; soaked if needed
  • 1 tbsp maca powder
  • 1/2 tbsp mesquite powder

Instructions

  • Mix all ingredients together in a food processor or vitamix until it is well blended.
  • Pat the dough down with your fingers and use a spoon to smooth the top. I the mixture sticks to the spoon, clean the spoon with a wet towel.
  • Freeze for 30 minutes.
  • Refrigerate.
