Raw Vegan Nachos
Hearty corn chips, taco meat, zucchini nacho cheese, and salsa fresca come together to make an incredibly fresh and flavorful raw vegan nacho dish.

- 10 or so hearty raw vegan corn chips
- 1/4 cup raw vegan taco meat
- 1/4 cup zucchini nacho cheese
- 1/4 cup salsa fresca
Zucchini Nacho Cheese
- 1 cup zucchini; dried
- 1 red bell pepper
- 1/4 cup nutritional yeast
- 1 garlic clove
- 1/2 lemon; juiced
- 1/2 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp salt
Zucchini Nacho Cheese
To remove excess water from zucchini, dehydrate at 150 degrees for about 1 hour. Or you can stick them in the oven on the lowest temp for about 30 minutes. When they look to be dry on th outside, they are good enough.
Add all the ingredients to a blender and blend until smooth.
