Easy Homemade Coconut Milk
An easy way to make coconut milk for recipes that call for dairy free milk.

Ingredients

quart
water
1/4
cup
shredded coconut
1/8
tsp
xanthan gum or
1 tbsp chia seed + 1/2 cup water

tsp
lemon juice
Instructions
If you're using chia seed gel instead of xanthan gum, soak the chia seeds in water until it's all gelled together.
Blend the shredded coconut until its coconut meal.
Blend all of the ingredients together, and store in a mason jar with an airtight lid in the fridge.
Notes
Store in fridge for up to 7 days.
If using chia seed gel, subtract1/2 cup water from the quart water.
