Easy Homemade Coconut Milk

An easy way to make coconut milk for recipes that call for dairy free milk.

Ingredients

  • 1 quart water
  • 1/4 cup shredded coconut
  • 1/8 tsp xanthan gum or 1 tbsp chia seed + 1/2 cup water
  • 1 tsp lemon juice

Instructions

  • If you're using chia seed gel instead of xanthan gum, soak the chia seeds in water until it's all gelled together.
  • Blend the shredded coconut until its coconut meal.
  • Blend all of the ingredients together, and store in a mason jar with an airtight lid in the fridge.

Notes

Store in fridge for up to 7 days.
If using chia seed gel, subtract1/2 cup water from the quart water.
