Raw vegan chocolate avocado pudding is a quintessential snack in the raw vegan world. But when you’re out of cacao, there’s only one thing to do, and that’s make do with what you have. This time that happened to be frozen bananas and berries.
As a new mom I’m constantly trying to make new foods my baby will enjoy, but it has to be healthy, quick and simple, and ideally I can make it with one hand and a baby on my hip. This recipe hits all the marks as well as being filling and delicious!
Adrianna was thoroughly impressed. When she couldn’t work the spoon fast enough, she would use her fingers or just put her whole face in the bowl!
Generally I don’t put banana in my avocado pudding, but since it’s hot here and baby girl is teething, I wanted to make it cold like ice cream. So in went the frozen bananas. We also needed a flavor besides chocolate, so I decided to go with black raspberries, blueberries and red raspberries.
Just throw in all the ingredients and pulse in the blender until silky smooth.
So when you’re in the mood for pudding but you’ve run out of cacao, try this awesome berry banana variation instead. You won’t regret it!
Berry Banana Frozen Pudding
Raw vegan pudding made with avocado, banana, dates and berries.
- 3 frozen bananas
- 3 medjool dates
- 1 avocado
- 1/4 cup frozen bananas
- 1/4 cup water
- 1/4 tsp vanilla bean optional
Blend all the ingredients together until smooth.
- It may take up to 3 minutes in the blender to get it completely smooth.
- *Dates must be super soft, if they can't be easily mushed by hand, soak them for 10 minutes to soften, or you will have little date chunks.
